Here's a minimalistic desktop for my Eee PC. It sports a panel-less Gnome environment, which is replaced by Avant Window Navigator for the dock and Conky for the monitors on top of the screen. The system tray is handled by trayer.
I have no idea what icons I used here, but by the looks of it, it's seems like a mix-and-match kind of situation.
